About Us
Like many in the food business, my story begins cooking at home at my mother’s side. I was blessed to have a wonderful Mom, lovingly known as “The Betty”, who was an amazing cook! She was meticulous in the details of everything that came out of her kitchen, and she always added that extra touch of love to all she prepared. She instilled her passion in me, taught me much about food, and everything about life!
Fast forward to many years later, having worked my way up the culinary ladder, having traveled the world to experience many cultures, dishes and cooking techniques, we’ve come back to mom’s Irish roots that she was so proud of!
With many years of culinary experience and tapping into our Irish heritage, we have developed the Original Boxty Potato Bites and our Boxty Potato Cakes. A marriage of Irish tradition and American innovation, our Boxty products are made with the finest ingredients, a meticulous recipe and process, and a touch of Betty’s love.
